One thing I love about summer is the abundance of fruits that we have available. Fresh sweet fruits that can be utilized in so many ways. I especially love having salsa using fruits. I can't remember the first time I tried this salsa with fruit, but I know since then I have done numerous combinations. So today's recipe is a great summer salsa

I love peaches.

This fruit is always just a sweet find for me. It is extremely easy to find in Florida.

Summer Fruit Salad

 We are also going to add some tartness to the mix with shado beni, red onions, and red bell peppers



Combining these with some pineapple (I used a tin can but fresh is always good)



And adding lime juice



Makes for a refreshing summer evening snack


That tastes even better after sitting for 20 minutes in the fridge


Grab some chips and jump in.


I have a confession though. I don't always eat this with chips. Sometimes I just grab a spoon and shovel some into my mouth. It also works great on top of fish.

Summer Salsa

Ingredients (Serves 4)
  • 1 can cubed pineapple, drained
  • 1 ripe peach cubed
  • 2 leaves shado beni (or culantro)
  • 1 teaspoon lime juice
  • 1/2 red bell pepper
  • 1/3 red onion
  • Salt
Instructions
Add cubed peaches to bowl
Add onions, bell peppers
Add pineapple
Add shado beni
Mix ingredients together
Add lime juice and mix
Add salt to taste
Leaving the salsa to sit for 20 minutes in the fridge is a plus
