Carrot, Ginger Soup

It's Monday already. Where did the weekend go? And where did summer go? But even though everything seems to be flashing past us this soup will make you slow down and enjoy the flavor. Who would want to rush through tasting a soup that is smooth like velvet and packs a punch with some freshly grated ginger?

This soup is so easy.

And it's so colorful.

And flavorful

And all it requires is some onions, carrots, garlic, freshly grated ginger, a little brown sugar, cream/milk (optional) and some veggie broth.

Carrot Ginger Soup

All you need to do is saute the veggies in some butter (onion, garlic, ginger) then add the carrots.

Add your broth and brown sugar and simmer until carrots are tender.

Freshly grated ginger with sauteed carrots, onions and garlic gives a taste of heat and flavor.

After simmering for a few minutes, we cool the tender carrots for a little and blend.

You can add milk here if you want (I loove creamy soups) and Voila
