Tilapia smothered in Tomato Sauce

I am sure like me, everyone has those days where you do not know what to cook. It's the most difficult thing. You have no urge to eat any specific thing so you have no direction on what to cook. I remember this happened a couple times in our house when I was growing up.
This Tilapia baked in tomato Sauce is a result of one of those nights.
I can't imagine how difficult it would be for mothers who have kids depending on them for dinner who may be lost on finding that meal. I remember growing up my mom always seem to be able to create dishes out of nowhere. I would hear her say "I don't know what to cook for you guys" but then she would magically create a dish that was beyond delicious from the "scraps I found in the fridge".
This fried then baked tilapia was one of the many dishes she created that I loved.
It is such an easy process. And the flavors combined would have you licking your lips and asking for more. So when I saw that my meat shop had some HUGE tilapia I decided to grab and make this for Sunday dinner.
There is not a lot of work to do.
I seasoned the fish with my green seasoning and left it while I made the sauce.
The sauce is very easy but is where you have to make sure you get the flavors right. Onions, bell peppers, garlic all cooked together in broth seasoned with sugar, black pepper, salt and a little pepper sauce.
Once the fish is fried lightly and crusted after it has been dipped in egg, then dipped in a flour mix with old bay seasoning, black pepper, and salt. Then it's put to bake in the sauce for 10 minutes.
And you just created this fish dish that is full of flavor and doesn't need to be eaten with anything else. (Don't tell my mom I said that).
Or can easily be eaten with some white rice (Which my mom would probably have suggested anyway)
There is fish below there, I promise you. This sauce, savory and seasoned is a great marriage with this flaky fish.
I promise you, there would be no stopping eating and no complaining and all made with basic ingredients.
Just like my momma did.
