Buffalo Shrimp Salad

An easy salad on a bed of romaine lettuce with shrimp, avocado and mango bathed in a dressing of caesar, honey and buffalo sauce.

Instructions
I first had this salad at my aunt's house one day. Like me, she loves to grab recipes where ever she sees it and gives it a try.
This salad is a winner combination that is so easy.
While I was chomping away on this salad she reminded me that she used to have to force me to eat salads or anything green and leafy actually. She and my mom would have to wrap lunch meat in lettuce leaves since that was the only time I would try to eat lettuce.
Now, I would happily eat a salad once there is meat in it. HA!

She grabbed this recipe from one of Publix's Apron's cards and I must say it indeed was a good pick.
I know it's getting colder in some places and this salad would be a great "hold on to summer as long as you can" salad.
Mango's are quickly disappearing here in Florida. I am not sure why as I know they import from many places, but I am surely not seeing as much as I was seeing last month.
Avocados, on the other hand, are still very much in abundance. Especially those HASS avocados. These little avocados are pretty new to me. I grew up with what they call the "large avocado". That is my normal. I do think that the HASS are way sweeter than the large ones and is the better of the two to use in this salad.
A bed of romaine lettuce drizzled in dressing then layered with shrimp, avocado and mango.
And drizzled again.
This dressing is bowl licking good
I assure you, you will be eating this quickly and trying to lick the bowl.

Buffalo Shrimp Salad

Ingredients (Serves 2)
- 3/4 lb peeled & deveined shrimp, tails removed
- 1/2 large fresh mango, coarsely chopped
- 1 small avocado, coarsely chopped
- 1 tablespoon old bay seasoning
- 3/4 bag romaine lettuce
- 1/4 cup Caesar dressing
- 2 tablespoons Buffalo wing sauce
- 2 tablespoons honey
Instructions
Preheat oven to Lo broil.
Combine honey, buffalo wing sauce and caesar dressing and set aside.
Wash shrimp with lime and drain off all liquid
Season with Old Bay seasoning.
Line baking pan with foil.
Chop mango and avocado, discarding peel and seed.
Place shrimp on the pan in single layer.
Broil for 5 - 8 minutes (Till shrimp is pink and opaque)
Layer romaine lettuce in bowl
Drizzle lettuce with dressing mix
Layer shrimp, avocado, and mango
Drizzle with leftover dressing.
Serve
