A refreshing orange juice dressing perfect for light summer salads.
I am on a mission to incorporate more "greens" into my eating regime. I felt the easiest way to start and not be too overwhelmed would be with salads. But what I think makes a salad amazing and not just "good" is the salad dressing.
This salad dressing I made is refreshing, light, sweet and tasty. I see myself sitting outside (under the shade) eating a salad pepped-up with this dressing.
I think salads should come together easily and quickly. Not too much work needed.
And this dressing is the same. Mix and set aside to rest for a little (or a lot it can be stored in the fridge) and ready to pour when needed.
These ingredients are simple ones you can easily find in your pantry when you need to make it. With the orange juice and a hint of lime juice, there is this sweet but tangy flavor to this.
I love the fresh orange juice sweetness that is offset by the lime juice and mayo but seasoned up with the parsley.
This dressing lasts about a week in the fridge so you can easily have this on hand to use.
So now for me to start on my simple salads and get my greens on! I especially love this dressing with my Spicy Shrimp Salad
