Stove Top Jerk Chicken

There is nothing like jerk chicken off of a grill. The outside of the chicken has a nice spicy crust and inside is tender and juicy. Not everyone has a grill, not all the time do you want to pull out a big grill to do some chicken and sometimes it's just raining. Well today I am going to show you how I do my jerk chicken on my stove top and get the same results.

I always use chicken breasts for this, but thighs would also work great. So grab your favorite jerk seasoning, your chicken and lets get this started.

The first thing I do is season up my chicken with my green seasoning that I made last week. If you don't have any green seasoning you can season your chicken as you normally do prior to cooking.

If you are using chicken breasts like I did, I grabbed the medium sized ones as I always like to "butterfly" it for even cooking and to give it an even crust.Then I lather on my jerk seasoning. I coat it as well as I can. Always keep in mind the heat level of the jerk seasoning that your are putting onto the chicken. Even if you grabbed a mild seasoning if you coat it with a lot it would probably become HOT. Leave it to marinate for at least 30 minutes. You can leave it over night but keep in mind that the longer the hotter.

Get your frying pan or skillet and turn on to medium heat. Add your oil and let's get ready to crust this bad boy. I somehow get excited when making this chicken.. hahah.

When the oil is heated add chicken and leave it to crust, about 3 to 4 minutes. I usually give it a little swirl so it's not sticking. Then flip to the other side and give it a swirl and leave for another 3 minutes. You can continue doing this a few times. You don't want the breast burnt but you want it crusted. The time can vary depending on how thick a piece you used.

End result a nicely crusted but tender on the inside piece of chicken. Temp of chicken would be around 165 degrees

This can now be eaten with rice, and steamed vegetables with some salsa for a great dinner.

I love to use the breast to create some other quick meals that I am going to show you tomorrow. So don't eat it all out!!

  • 1 chicken breast per person
  • 2 tbl spoons green seasoning per chicken breast
  • 2 tbl spoons jerk seasoning per chicken breast
  • 1/2 tbl spoon oil
  1. Season chicken breast with green seasoning
  2. Butterfly chicken breast for an even cut
  3. Coat chicken breast back and front with jerk seasoning
  4. Leave to marinate for at-least 30 minutes (can be left over night)
  5. On Med Heat, pour oil into pot
  6. Add chicken breast, move it around for a little
  7. Leave to crust for 3 minutes
  8. Flip breast and move around and leave to crust for 3 minutes
  9. Repeat this process until meat is cooked through. (165 degrees)
  10. Crusted outside and tender inside
