A quick and easy bite. A perfect way to use up that leftover chicken from the holidays for those last minute hangs outs.

A quick and easy recipe for chicken balls using pre cooked chicken. Great for parties for both adults and kids and perfect to top your salads.

Ever had a last minute guest drop in on you and you have no idea what to give them to eat?

All you have in the fridge is some leftover chicken from yesterday's dinner? Here's a great way to repurpose chicken you may already have that is already cooked in your fridge.

These fried chicken balls are quite easy to make and are a great "go-to" for a quick snack when you have company over. Or even if you just want something for a Friday night.

Did I mention it's quick?

I love making these. They're like mini poppers bursting with flavor.

I just want to grab two, three, four, and pop them into my mouth at once.

And the good thing you can season these up as you want to. Want to add a little cayenne? Add a little jerk seasoning?

These can easily be used to top a salad also.

That leftover chicken is getting put to use.

You want to debone the chicken you have and go ahead and throw everything into the blender (well not the stuff to coat). Form that into balls then get ready to coat them.

Why the blender? I prefer the perfect mix the machine gives. You are free to your use hands. The mixture gives it a uniform mix, that is smoother and much easier to get into balls.

Did I ever mention I have a fear of frying things? Especially deep frying? But with these, I manage them like a professional *pops collar*.

Once golden brown on the outside, just set them aside and keep frying the batches.

And they pair easily with any of your favorite sauces. I quickly grabbed out some of my mango chutney to dip these into. What about some tambran sauce? Or some ketchup and mayo mixed up? Yummy!!

I must confess that it was hard not eating these out before I took pics. I actually had to talk myself out of eating more. "Renz you have to take pics of these first". "Renz you cannot "test" anymore". "Renz, walk away". Haha

Easy Chicken Balls

A quick recipe for whipping up some delicious chicken balls, perfect for last minute hang outs
prep time: 20 Mcook time: 20 Mtotal time: 40 M

ingredients:

  • 1/2 lb cooked seasoned chicken (or turkey)
  • 1 cup breadcrumbs
  • Salt & pepper
  • 1 egg
  • 1 tablespoon lime juice
  • Oil for frying
  • Eggs for coating
  • Breadcrumbs for coating
  • 1 tablespoon chopped culantro (parsley)

instructions:

How to cook Easy Chicken Balls

  1. If chicken pieces have bones, remove bones from chicken
  2. Mince meat finely and mix with the cup of bread crumbs, parsley, salt, and pepper (adjust to taste)
  3. Add egg and lime juice and beat until smooth
  4. Divide mixture into small portions and shape into balls
  5. Beat egg and coat each ball with egg and crumbs. Set aside until all balls are coated
  6. Heat oil on medium heat and fry in batches until golden brown
  7. Drain and serve with toothpicks and mango chutney

NOTES:

You can use precooked turkey meat for this also
