As Caribbean people, and Africans, we depend heavily on ground provisions as a staple in most of our meals. We use it a lot!!

From cassava to dasheen to sweet potatoes, eddoes tannia. We, Caribbean people, also sometimes include green banana, breadfruit, and plantain into this category.

Ground provision is considered the "Food of Champions" and is said to contribute to strong, healthy individuals.

This cassava salad is healthy, but for me, first and foremost it is delicious.


This is not to be confused with yucca, the shrub. If you may still be a bit confused on this cassava, it's the bases of tapioca too. Dried ground cassava is tapioca.

This cassava salad is a great replacement for using regular potatoes. It is just like a potato. It is high in starch, has very little fiber and they both generally have the same consistency.

Cassava though is very low in sugar, contains a variety of nutrients.

If you have seen my other provision pie that also uses cassava but it is a nice layered pie with some tomato sauce.

This version is different. It is more of a mix together that doesn't require that much work. Plus no baking time. WIN!

I use frozen cassava for this.

There are numerous brands available on the market but Goya is the one I see most often in the supermarket. I have a bag normally in my freezer since we use it in soups a lot

I used half this bag for the recipe. This cassava is usually a firmer one. So make sure to test yours when boiling to make sure it's at the tenderness you want it.

Also, make sure you give it some time to cool before cubing it up.

If you are using fresh cassava you probably can cube it before boiling, but know it may crush up a bit when boiling.

Also, make sure you use a non-stick dish to make this. I find the cassava sticks quickly in the butter if you are not careful. I love using cast iron pots to cook with for this reason.

You get a nice even heat right through. They are some really expensive ones. But there are also some medium-priced pots on amazon from their amazon basics line that are pretty good.



I have given measurements for salt and pepper but test and make sure you do it to your liking. Another nice addition is a little garlic powder to the mix.

Make sure that you melt the butter and saute the carrots till they too are tender. Unless you like raw carrots in yuh food.

Then it's just mix up time and you're ready to eat.

I love the ease of this dish and the adaption from the normal way we would usually eat our ground provision

This went down well for us with some creole fish.

Don't feel bad to make it the side of the day. With some BBQ jerk chicken or some escovitch fish.

  2. Can cassava be made similar to potato salad with mayonnaise etc.?

  3. Potato salad has mayonnaise, frozen peas and carrots combine all with the cubed boiled white potato. Can the same be done with cassava?

    1. Yes. You can very much use cassava instead of potato in salad. We do that all the time. I'll have to post share my recipe in a post. lol
